Instructions Filling
  1. In a pan medium heat, then add a touch of olive oil and add shallots.
  2. Add mushrooms, touch of salt & garlic
  3. Cook till water has evaporated from mushrooms
  4. Put mixture into a bowl and add some parsley and chives
  5. Add nutmeg and lemon zest
  6. Add parmesan
  7. Add just a drop of Double Cream
  8. Mix and put into fridge for 30 min
Instructions Sauce
  1. In a pan medium heat, then add a touch of olive oil and add shallots till soft
  2. Add mushrooms and sweat for 5 min
  3. Add garlic & stock and reduce by half
  4. Add chives and cream and bring to a boil for 1 min
  5. Add salt and pepper to taste
